While still youthful, this Pinot Noir will appreciate a decant, after which time it will reveal its true charm; a pretty nose of glacé cherry and cranberry, some spicy hints of clove and anise and a subtle oak imprint. With a supple front palate, this Pinot Noir has a solid core of lush textured fruit, cloaked with structured tannins and an acid spine, complimented with oak and fruit flavours.

Vintage Conditions: 2016 saw an unusual vintage with budburst commencing two weeks earlier than normal. This early pattern continued all season, from flowering, through to veraison and ultimately harvest, brought on by the prevailing dry and mild winter conditions. Spring and summer were warm, fortunately with minimal extreme heat. The lack of rain and consequent dry soils throughout the course of the season made irrigation essential.
Viniﬁcation: The fruit was picked cool and largely de-stemmed, though not crushed, to open fermenters for a warm ferment, which began with the indigenous yeast and finished with cultured yeast. The fruit was gently pressed and settled a few days before racking to barrel, of which 25 per cent are new and all the oak from the forests of France. The wine stayed in the cool cellar, regularly topped and checked till the best barrels were ready for blending. This was followed by a light fining, with vegan-friendly fining agents and cross flow filtration with bottling taking place the following February.
