EARTHY AND SAPPY, PERFUMED, SILKY AND SEXY
This 2016 Pinot Noir derives its name from the 600ha family property named ‘Greenbanks’. It is sappy, earthy and perfumed, and exhibits red cherry, raspberry and bramble fruits leading to forest floor and clove spice with a hint of savouriness. The sweet, plump fruit is balanced by soft acidity. Fine, subtle tannins lead to a dry, lingering finish.

Vintage Conditions: A textbook vintage which saw the serendipitous confluence of quality and quantity. A dry winter saw an early start for budburst though a cold spring spell eased the growth and the mild weather continued for pretty much the entire season allowing the growth cycle to realign and extend ripening allowing the fruit to ripen perfectly, as long as water was available as it was also pretty dry. The vintage commenced 28 February with Chardonnay followed by Pinot Noir harvested over a multitudes of picks between the 3 and 24 March for a range of fruit flavours and ripeness levels.
Viniﬁcation: The fruit is picked cool and largely destemmed but not crushed to open fermenters for a warm ferment which starts with the indigenous yeast but finishes with cultured yeast. Pressed gently and settled a few days before racking to old large puncheons, designed to slowly age the wine and retain bright fruit flavours. The wine stays there in the cool cellar, regularly topped and checked till blending time 9 months later, followed by a light fining with vegan friendly fining agents and cross flow filtration and bottling the following February.
